made this about a year or so ago.....it was great... so trying it again.

Like most food I see, it looks great and I'd eat it. Have a pork tenderloin brining in a mix of salt, sugar, water and pineapple juice for later. Will glaze it with a sweet-chili glaze and top it off with an orange balsamic sauce.
Don't have any idea how it will come out but it sure sounds good.

Easy... prep eggplant, peel and slice to thickness you like, dip in beat eggs, dip in seasoned bread crumbs, fry in pan with oil of your choice till golden brown( I like crispy, darker), put a little sauce in bottom of CP, lay in a layer of eggplant, shake pamesan cheese on them, sprinkle mozzarella on them, put a tablespoon of sauce on top of each piece eggplant repeat, and repeat till eggplants all in crock. I start it on high for abut 45 minutes, then turn down to medium for about 4 hours. Thats it. Spices, basil ,pepper, salt to your liking.
