Does anyone know if you can hook a regular wall thermostat up to the dvc500 to replace the probe for room temp mode? And where exactly does the probe plug into the stove at?

Is this what is called a ESP?
Did some searching, this is to keep the stoves output at a constant temp by controlling the fire process...which in turn, keeps the room where the stove is physically located at to be maintained within 1 degree of the set temperature.
That being said, this stove is a "space/room heater" ...it is NOT a furnace...so, no extended remote t-stat.

Used in their pellet stoves, but is still same technology:

pg 18 describes operation.
Plugs into control box. The room temp knob IS YOUR THERMOSTAT.
You can lengthen the senor wires, but make good connections,
as the sensor is probably a thermister, and relies upon resistance to do its job.
