Bacon Pancakes

I treated the family to "Bacon Pancakes" this morning and wanted to share since they are awesome! Take a couple slices of cooked bacon, lay them sided by side on a preheated griddle (375 degrees) and cover carefully with pancake batter. Let cook till bubbles come up thru the whole pancake, then flip and cook till golden brown as usual. Top with real butter and real maple syrup. Serve with hot coco in a Rush 2112 mug, next to two of your favorite chunks of coal at the in-home pine bar..

Eatin good, in the neighborhood my friends... 8-) :D

Still feelin fat and happy after THAT breakfast! :lol:

In my early 20's I spent a couple spring times helping a local sap collector tap sugar bushes. I was really impressed with the network of tubes and lines that ran out thru the maple trees. At the bottom of the hill would be a 5000 gallon tank with a vacuum pump that actually helped pull the sap out of the trees and down the hill. One sugar bush (100's or perhaps a 1000 or more tapped maple trees) would fill that tank twice a day during peak sap season. Incredible what goes into making real maple syrup.. :)

Ever tried maple frosted donuts topped with bacon? Goes good with a side of Lipitor and a glass of water.
