In the late Fall I butcher cattle and use the bones to make a brown stock. Moved the operation out to the Tack Room as the process takes up the whole kitchen and extends into a week of processing what with the pressure canning and all. It takes 24 to 26 hours to make a batch of 30 pints. This year I put up 120 pints.

The bones are roasted in the oven and a mirepoix of roughly chopped vegetable cut, usually a mixture of onions, carrots, and celery are roasted on the wide cooking surface. Then into a pot with water to simmer overnight then strain and into a pressure cooker. And then start all over until all the bones are gone.

Nice thing is the kitchen in the house is clean and the mess is in the barn.

Turns out you where on a sleigh ride :)

Nice video ,my wife & I enjoyed it much :D

We did comment while watching ,that it would be nice to have just listened to the horse & sleigh noises going thru the snow. :)

Maybe a couple of bells on the harness to jingle.

Not complaining about your music choice.
Much better than the rock crushing stuff some listen too.

Pleased you enjoyed the video. For me, choosing a music track is always a difficult part of making a video.

I agree the natural background sound with the sleigh Bells would be preferred, However its a bit hard to do with all the splicing and cutting in of video clips. The changes in volume and unwanted additional sounds become distracting and annoying. A background track covers over all that and gives a seamless presentation.

I enjoyed the video very much. Pretty country out there. If you were hauling a load of sap or Canadian whiskey I might mistake it for Vermont. :)
