Was thinking I could do a lot on top (including baking bread) in a cast iron covered pot which I have in many sizes. I am also thinking about what I can insert and close the door.

Ha ha tkx for that recipe. I have a really good recipe that I use for sourdough. In fact, it is the best bread ever, no exception. 400 oven covered for 30 min and then 15 uncovered to brown. Perfect for your oven. If you want to try it, let me know and I will post. For stove top I am worried about the temp gradient and the non-browning of the top.

My wife has the drying rack next to our chubby as we speak. Fired it up Friday night (had to take the chill out of the house according to her)
