An all white deer. I think it's called a pibald?

Albino! Or, just a white deer. A true albino will have no pigment in their eyes also. White deer are rare, Albino are expremely rare. It's cool to see either one!

That is a piebald deer, I have seen a few over the years. Many American indian cultures regard the piebald as the spirit of family member or friend transfiguring from human form and was strictly taboo to kill one.
