hot dogs

Hot dogs are one of my favorite foods - just about perfect.

Anyone ever make their own? I bought a grinder/stuffer from Northern Tool that finally came today and I'm anxious to use it. I've made kielbasa once or twice a year and am looking forward to not having to hand crank it all together but first, I've got hot dogs in mind for a gathering I'm having Sunday. I've got the casing already so I'm rearing to get busy.

Have you ever made them? Do you have a recipe to share?

Any other sausages that anyone makes?

Here is a good source for some seasonings and any other meat grinding needs you may have. http://www.davesbutchersupply.com. :idea: They are a very good place to deal with. I really like their Witt's brand seasoning mix for hot or sweet Italian sausage. I and a lot of other Pittsburghers prefer it over the Conagra season mix. Before the hurricane Ivan flood I used to make about two 25lb sweet and three 25lb hot batches of the Witt's bulk fine grind sausage a week for people. I have not rebuilt the meat kitchen or replaced the coolers since. I just could not justify the expense of the replacement of that hobby yet. It is still on the back burner, but at least it is on the stove. :funny: If you have any questions you may PM me. :) DOUG

Bring that AHS roadshow to within 60 miles of Hunterdon County, NJ and I promise to reward the opportunity to see the cutaway with some homemade hotdogs - assuming I don't kill myself with listeria first. I did cancel the KA-6 order but haven't yet ruled out another boiler for the future.
