Variation of Temperature for an Outdoor Boiler Coal Vs Wood

I am trying to go exclusively to coal for my outdoor boiler due to time constraints and the inefficiency of wood. I was wondering how much variation of temperature I should set my boiler for when I am using coal vs wood. For example- when I used wood the system worked best when I set the thermostat at 180 degrees and a variation of 5 degrees before the forced air blower would turn back on. Is this the most effecient manner to burn coal? Please remember I have a HUGE firebox which I first put in 280 pounds of anthracite (from an empty firebox with no fire) and then add 160 pounds daily. I am heating a hotel, restaurant, and bar. Thanks for any help.
