Oven at 350~

3 C Flour
1/2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
2 tsp Cinnamon ---- Mix together

3 Eggs
1 1/2 C Sugar
1 C Oil
1 tsp Vanilla
2 C Shredded, mashed whatever ---- Mix together and add to the above. Put in greased loaf pan (may also put into two loaf pans -one for home, one for work). Bake about an hour.

Got this recipe from someone who got it from somewhere (???). It's called "availability" because you use whatever you have available. I have used leftover mashed potatoes (do not use the nice garlic ones!), bananas, apple sauce, zucchini, pumpkin and other various squash. My favorite is butternut squash (must be cooked first) which I don't like except in this bread. I add pecans to it, too. Feel free to experiment. I tried chocolate chips with the banana and that was a little weird. If you try something different, post and let me know how it turns out.
