Here's a big pot of ground lamb chilli slow cooking on the Glenwood range all morning. Can't wait for dinner!
One pound ground lamb
3 cloves miced garlic
one can petitte cut tomatoes with jalapenos
one med onion diced
can of white great nothern bean or cannaloni
can of black beans
chili seasoning (pack of MacCormack) or your own
can of Mexican corn
Take your slow cooker or stew pot and add a good glug of olive oil. On med heat throw in the garlic and chopped onion and the lamb to brown and seperate. Then just toss in everything else, cover and slow cook for 2-3 hours. I serve this over steamed rice and topped with some monteryjack/colby cheese. But if you want it with out the rice as my little lady does , just serve with some tortilla chips. Enjoy.
