Hitzer 983, How Do I Know I Have a Good Draft

Hello, New to the forum and have a few questions regarding my new stove. I have a hitzer 983 insert with a 25 foot 8in stainless lined chimney burning nut. How do I know I have a good draft? Seems like it takes a while to get the coal fire going. How do I get the most heat out of the unit for the longest period of time? What are the two knobs above the door for are they some kind of air control. How well do I have to shake to get all the ashes out after a 12 hour burn? Seem like I left to much ash in and starved the fire for air and it went out. Finally dose anyone know where I can get a coal chute door for my coal bin???
